SPINACH QUICHE 
2 pkgs. frozen chopped spinach (thawed and drained)
1/2 lb. sliced mushrooms (fresh)
1 lg. chopped onion
3 eggs
1/2 pt. half and half
1 lb. grated Monterey Jack with jalapenos
1 lb. grated Cheddar cheese
2 (9 inch) deep dish pie crusts

Grate cheeses and mix with spinach, mushrooms and onions.

In separate bowl beat eggs and half and half together. Pour mixture of spinach in each pie crust. Pour egg mixture over spinach. Bake 45 minutes at 350 degrees.
