“BACON WRAPPED SCALLOPS” IS IN:

BACON WRAPPED SCALLOPS 
12 large sea scallops, cut in half
12 pieces of bacon, cut in half
garlic powder
lemon pepper (optional)
teriyaki sauce
cayenne pepper
olive oil spray

Cut large scallops in half. Wrap each scallop in half a strip of bacon and secure with a wooden toothpick. (Smaller scallops may be left whole).

Spray lightly with olive oil spray and sprinkle with teriyaki sauce on both sides. Dust lightly with garlic powder and a pinch of cayenne pepper.

Place in baking dish and bake at 425°F, turning once for 20 to 30 minutes or until done.

Serve with sweet and sour sauce.

Variation: Omit teriyaki sauce and dip scallops in melted butter before wrapping them with bacon. Sprinkle chopped onions, parsley and green peppers over scallops and drizzle with olive oil before broiling.

Serve with lemon wedges. Yields about 2 dozen.

Try large crawfish tails wrapped with partially cooked bacon. The tail meat is already partially cooked, so the bacon should be cooked pretty much done but not crisp. Broil or BBQ for about 2 minutes per side. Crawfish meat is much like lobster but much sweeter. Do not overcook or they will be rubbery. Cocktail sauce w/a tiny bit of horseradish and Louisiana hot sauce compliments them superbly.

Big sea scallops (won at a meat raffle) double wrapped bacon, first dipping the scallop in a minced garlic,honey barbecue,soy sauce dip, after wrapping the dipped scallop, wrap one more piece the opposite way with a water chestnut on each side, toothpicked together! Bake at 400°F for 30 minutes... Pretty good...

I cut the bacon in 3rds and wrap around cocktail wieners cover with brown sugar and bake at 375°F til bacon looks done. I always get raves over these. And they're economical too.

If you want to make a hit with the scallops wrapped in bacon try a quick marinade called Cormier's Gold, Orange Burst, a wheat and gluten free sauce. I haven't missed yet, everyone loves it! Prep and cooking time is the same, all you need is the sauce.

I made this for a party last weekend and they were a huge hit! I did feel that simply baking them didn't get the bacon crispy enough, however. In my rush I didn't even have any cayenne and they STILL turned out deliciously. Even a woman who's an actual chef told me they were excellent. These are a bit pricey, so I just used one pound and simply cut them in half. But GREAT RECIPE ~ I'll be making these again for another party I'm having this weekend. Thanks so much!

This recipe is delicious just as it is without variation. I tried the ham in place of the bacon on one of the scallops and did not like it at all. Nothing takes the place of crispy bacon.

I made this recipe for my husband and I... And wow! These are so easy and are amazingly flavorful! My husband gets bored with his food very easily, but he loved these!
