BEER BATTER FOR FISH AND CHICKEN 
2 eggs, separated
1 tbsp. oil or butter
1 tsp. salt
1/4 tsp. pepper
1 1/3 c. flour
3/4 c. flat beer

Beat egg yolks with oil, salt, and pepper. Add flour and beer to mix. Beat well and refrigerate for 3 1/2 hours. When you are ready to use, fold in stiffly beaten egg whites.

Deep fry chicken 5-6 minutes at 400 degrees. Deep fry fish for 3 minutes.
