BEER BATTER FOR FISH OR CHICKEN 
3/4 c. flour
3/4 c. stale beer
Salt to taste
1 tbsp. melted butter or vegetable oil
1 egg, separated

Mix flour, beer, salt and butter until there are just a few lumps. Cover and let stand 2 to 3 hours. Just before coating fish or chicken stir in egg yolk, beat white until stiff and fold into batter. Coat fish or chicken. Deep fry or pan fry in oil.
