BEER BATTER FISH 
1 lb. catfish filets
3 to 4 tbsp. Bisquick baking mix
1 c. Bisquick baking mix
1 egg
1/2 tsp. salt
1/2 c. beer

Heat vegetable oil in heavy skillet. Lightly coat catfish with 3 to 4 tablespoons baking mix. Mix 1 cup baking mix, egg, salt, and beer until smooth. Dip fish into batter, letting excess drip into bowl. Fry fish until golden brown, about 2 minutes on each side; drain.

Makes 3 to 4 servings.

My wife and I really like this recipe. We used panfish (bluegill), and added a little cayenne and paprika. Make sure the oil is hot to seal in the moisture, 'cause it's pretty killer with a crunchy outside and soft moist inside. Also, we fried up some squash using leftover batter. Awesome.

I don't really like fish, but if you fillet them up thin, then fry them up its super crunchy and moist I love this!!!
