CHICKEN-WALNUT SAUTE 
3 tbsp. vegetable or corn oil
3 to 4 green onions, chopped
2 med. celery stalks, chopped
1 tbsp. butter
3/4 c. coarsely broken walnuts
1 tsp. finely chopped lemon peel (yellow part)
2 tbsp. soy sauce
1 tbsp. fresh lemon juice
2 whole chicken breasts

Bone and skin the chicken breasts and cut them into bite sized pieces. Heat the oil in a 10 inch skillet over moderate heat until sizzling hot. Add the chicken, green onion and celery and stir quickly, until the chicken begins to brown. Add the butter, nuts and lemon peel. Continue to cook, uncovered, for a few minutes, stirring often. Turn off the heat; add the soy sauce and lemon juice and stir until the chicken is well coated with sauce. Serve at once with rice. Serves 4 to 6.
