BRANDIED APPLE CAKE | |
3 c. flour 1 tsp. baking soda 1 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1 1/2 c. vegetable oil 2 c. sugar 3 eggs 2 tsp. vanilla extract 2 c. finely chopped pared apples 1 c. chopped pecans or black walnuts Sift together first five ingredients. Beat together oil, sugar, eggs and vanilla. Beat in sifted mixture. Fold in remaining ingredients. Turn into greased bundt. Bake at 325 degrees for 1 hour and 15 minutes or until cake tester inserted in center comes out clean. Cool in pan for 10 minutes. APPLE JACK SYRUP: 1/2 c. apple brandy 1/2 c. apple juice 1/4 c. brown sugar 2 tbsp. butter Combine all ingredients for syrup in a saucepan. Bring to a boil, stirring until sugar is dissolved. Remove cake from pan. While cake is still warm, prick top of cake with fork. Spoon syrup over cake until all the syrup is absorbed. Store cake in an airtight container. |
