BRANDY APPLE SPICE CAKE 
4 c. chopped baking apples
6 tbsp. brandy
2 c. granulated sugar
1/2 c. salad oil
2 eggs
2 c. flour
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
1 tsp. nutmeg
1/4 tsp. cloves
1 c. chopped walnuts or pecans
1 c. raisins

Peel, core and coarsely chop enough apples to measure 4 cups. As they are chopped, place them in a bowl with as much brandy as they will absorb (about 6 tablespoons).

In a large bowl beat together the sugar, oil and eggs with an electric mixer until well blended. In another bowl sift the flour, cinnamon and soda, salt, nutmeg and cloves. Stir flour mixture into oil mixture until blended. Fold in the apples, nuts and raisins.

Pour the batter into greased and floured 9 x 13 x 2 inch pan. Bake in a preheated 325 degree oven for 1 hour or until a toothpick inserted in the center comes out clean. Cool in the pan on a rack. Serve warm or cool topped with whipped cream.

I had no raisins or nuts. So I substituted 1 c. cut-up dried figs and 3/4 c. oats, toasted lightly with 2 tbsp. butter, stirring frequently. This is going to be one of our Holiday favorites! Thank you.
