DUTCH APPLE BRANDY CHEESECAKE 
1 cinnamon crust
4 (8 oz.) pkgs. softened cream cheese
1 c. sugar
3 tbsp. apple brandy
1 tsp. cinnamon
1/2 tsp. vanilla
1/8 tsp. nutmeg
4 eggs
1 c. chunk style applesauce
1/4 c. whipping cream
1 recipe crumb topping

Prepare cinnamon crust. Beat cheese until smooth. Gradually add sugar, beating well. Add brandy, cinnamon, vanilla and nutmeg; blend well. Add eggs one at a time, beating just until combined. Stir in applesauce and cream. Pour into cooled crust. Bake at 350 degrees for 50 minutes or until center appears nearly set.

Meanwhile, prepare crumb topping, sprinkle over nearly set cake. Bake 10 minutes more or until just set. Cool on wire rack 5 minutes. Loosen sides of cake. Cool 30 minutes. Remove sides of pan. Chill thoroughly.

CINNAMON CRUST: Combine 1 1/4 cups graham cracker crumbs, 1/3 cup ground walnuts, 1/3 cup melted butter and 1/2 teaspoon cinnamon. Press on bottom and 1 1/2" up sides of 10" springform pan. Bake at 350 degrees for 10 minutes or until golden. Cool.

CRUMB TOPPING: Combine 3/4 cup packed brown sugar, 3/4 cup all purpose flour, 1/3 cup melted butter, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg until crumbly.
