DUTCH APPLE BRANDY CHEESECAKE 
1 recipe cinnamon crust
4 (8 oz.) pkg. cream cheese (softened)
1 c. sugar
3 tbsp. apple brandy
1 tsp. ground cinnamon
1/2 tsp. vanilla
1/8 tsp. ground nutmeg
4 eggs
1 c. chunky style applesauce
1/4 c. whipping cream
1 recipe crumb topping

Prepare cinnamon crust. Beat cream cheese until smooth. Gradually add sugar, beating well. Add brandy, cinnamon, vanilla and nutmeg. Blend well. Add eggs, one at a time, beating just until combined. Stir in applesauce and cream. Pour into cooled crust. Bake at 350 degrees for 50 minutes or until center appears nearly set. Meanwhile, prepare crumb topping; sprinkle over cake. Bake 10 minutes more or until cake is just set. Cool 5 minutes on wire rack. Loosen sides of cake. Cool 30 minutes. Remove sides of pan. Cover; chill thoroughly. Makes 16 servings. Use a springform pan.

Cinnamon Crust:
1 1/4 c. graham cracker crumbs
1/3 c. ground walnuts or pecans
1/3 c. butter (melted)
1/2 tsp. ground cinnamon

Combine and press on bottom and 1 1/2 inches up sides of 10 inch springform pan. Bake in a 350 degree oven about 10 minutes or until golden; cool.

Crumb Topping:
3/4 c. packed brown sugar
3/4 c. all-purpose flour
1/3 c. butter (melted)
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg

Combine until crumbly.
