BLACK BEANS A LA HUACHINANGA
(Mexican)
 
1 lb. black beans
3 tbsp. olive oil
1 med. green pepper
2 tsp. salt
1 med. dill pickle
1/2 lb. Cheddar cheese
3 hard boiled eggs

1. Cook the beans with salt and oil in a medium pot. Add enough water to cover.

2. When the beans are soft, add green pepper and eggs in slices.

3. Wait 5-7 minutes. Add cheese in small pieces.

4. Mix well. Remove before cheese sticks to pot.
