RAINIE'S EASY CORNED BEEF &
CABBAGE
 
4 slices bacon
1 lg. can corned beef (yes, canned, not fresh)
1 med. head green cabbage
Salt & pepper to taste

This can be a one pot meal. In a large boiler, I brown the bacon, cut into small bite-sized pieces, reserving the bacon grease in the pot. Chop cabbage into bite-sized pieces on top of browned bacon. Add salt and pepper to taste. Add just enough water in the pot to lightly cover the bottom of the pot. Cook just until cabbage begins to cook down, stir well and place corned beef on top of cabbage, leaving in a chunk until cabbage is done. When cabbage is done to desired tenderness, mix corned beef and cabbage well and serve. Excellent with corn bread. Oh, I forgot to add, this should be cooked with the lid on the pot and over medium heat due to not having a lot of water. The key is to more or less steam the cabbage instead of boil it.
