Peel one palm heart until tender white center is reached. Cut at once and place in boiling water with a little lemon juice (to keep it from turning dark). Cool and cut into pieces to go into blender. Blend, adding skimmed milk until it reaches the thickness of mayonnaise. With the blender still on, add drops of lemon juice and other seasonings as desired. Chopped green onions and olives can be stirred in when it is finished. Serve cold on salad greens or salads. This is a good diet mayonnaise.
If you are not watching weight, it can be made with richer milk or oil and vinegar.
