TACO CHIP CASSEROLE 
1 lb. ground beef
1 c. halved zucchini slices
1/2 c. chopped onion
1 (8 oz.) jar mild taco sauce
1 (6 oz.) can tomato paste
1 (8 oz.) jar pasteurized process cheese spread
1 (7 1/2 oz.) box tortilla chips

Brown ground beef in large skillet. Drain fat. Add zucchini and onion. Cook until tender. Stir in taco sauce and tomato paste. Preheat oven to 375 degrees.

In a 1 1/2 quart baking dish, layer half of the meat mixture and processed cheese spread. Top with chips. Repeat. Bake for 20 minutes. Garnish with additional chips, if desired. Makes 6 servings.
