ACORN SQUASH WITH CRANBERRY
FILLING
 
4 sm. acorn squash
Salt
8 tsp. butter
8 tsp. honey
1 (17 oz.) can whole berry cranberry sauce

Wash and dry squash; place in microwave uncovered, 15-20 minutes until soft. Let stand 5 minutes to cool. Cut in half and remove seeds. Place cut side up in microwave dish. Sprinkle with salt. Place 1 teaspoon butter and 1 teaspoon honey in each half.

Heat, uncovered, in microwave 4-5 minutes. Brush honey and butter over cut surfaces. Place spoonful cranberry sauce in each half, or serve with the squash on the table. (I used cranberry jam and preferred the taste.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
