FRESH-GINGER COOKIES 
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. grated fresh ginger
12 tbsp. room-temperature butter
1 c. sugar plus more for rolling
1/4 c. molasses
1 egg

Combine flour, soda and salt. Beat ginger, butter and 1 cup of sugar until light and fluffy. Beat in molasses and egg.

Beat in flour mixture until just combined. Chill at least 1 hour. Heat oven to 350°F. Roll dough into 1 1/2 inch balls and then roll them in sugar. Place 2 inches apart on ungreased baking sheet. Bake until edges start to brown, about 15 minutes. Centers will be slightly soft.

Let stand on cookie sheet 1 minute and remove onto rack to completely cool.
