GINGER COOKIES 
Butter flavored cooking spray
1/4 cup butter
1/4 cup molasses
2 cups sugar, divided
2 tsp. vanilla extract
2 egg whites
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ginger
1 tsp. cinnamon

Preheat oven to 325°F. Spray a cookie sheet with cooking spray and wipe with a paper towel to absorb the excess.

Combine butter, molasses, 1 cup sugar, vanilla, and egg whites in a large bowl and mix well.

In a medium sized bowl, mix together flour, baking soda, salt, ginger, and cinnamon. Add flour mixture to molasses mixture and mix well. Drop spoonfuls of dough (1-1/2 to 2 tbsp. each) into remaining 1 cup sugar to coat cookies. Place cookies on cookie sheet.

Bake for 14 minutes at 325°F. Cool for 3 minutes on the cookie sheet before removing.

Makes about 24 cookies.
