CORN MUFFINS 
1 c. whole wheat flour
1 c. cornmeal
1 tbsp. baking powder
1/2 tsp. salt

WET INGREDIENTS:

1 c. water
1 egg or egg replacer
1/4 c. oil
1/4 c. maple syrup

Mix wet ingredients in blender.

Sift dry ingredients. Add wet to dry. Mix gently. Oil muffin tins; fill 2/3 full. Bake at 375 degrees for 15-20 minutes or until golden brown.
