CHOCOLATE COATED MINTS 
1 egg white
3 1/2 cup confectioners sugar
3 drops peppermint extract (if you don't like peppermint use any other flavor like vanilla)
2 drops green food coloring extract (optional)
4 1/2 ounces semisweet chocolate

Whip the egg white until frothy. Sift in the sugar. Add your extract and coloring and mix well. (The consistency now should be thick you should be able to roll it in a ball.)

Sprinkle sugar on hands. Roll teaspoon sized amounts of the mixture into balls and place them on a sheet of wax paper or any smooth surface. Flatten each ball with a fork to form a flat disk (the fork gives it its pretty design -not exactly pretty lol:) Place in refrigerator for an hour or overnight to make it firm.

Put the chocolate pieces into a double boiler (a heatproof bowl on a saucepan) with 2 inches of water in it. (don't put the water with the chocolate, put it in the saucepan).

When chocolate has melted, stir until smooth. Allow to cool a little bit. Dip each mint half way into the chocolate. Store in refrigerator.

Serves 24.

Prep: 30 minutes. Refrigerator time: 1 hour
