PEPPER RELISH 
4 lbs. (about 18) med. green peppers or yellow sweet peppers
1 lb. (4) lg. onions
1 1/4 c. sugar
2 c. white vinegar
2 tbsp. salt
1/2 tsp. ground allspice
1/2 tsp. ground ginger
1/2 tsp. ground cloves
1 tsp. cinnamon
1 tsp. mustard seed

Wash vegetables, put peppers and onions through food grinder using a coarse blade, drain. Combine remaining ingredients and bring to boil. Add vegetables and simmer uncovered 5 minutes. Continue simmering while quickly packing one hot sterilized jar at a time. Fill to within 1/8 inch from top. Be sure vinegar solution covers vegetables. Seal each jar at once. Makes 4 pints. Use relish within six months.
