MASHED SWEET POTATOES 
2 lb. sweet potatoes, not yams
2 c. boiling water
4 tbsp. butter
1/2 tsp. salt
3/4 to 1 c. hot, rich milk
2 tsp. brandy or sherry extract or 1/2 tsp. nutmeg

Pare potatoes, cut in half lengthwise if large, add boiling water, cover and boil gently 20 minutes or until tender. The water should be practically evaporated. Drain off any remaining water. Mash or put hot potatoes through food mill or ricer, add butter, salt and milk; stir until smooth over heat. Remove from heat, quickly beat in desired flavoring and turn into hot serving dish. 4 or 5 servings.
