OATMEAL BREAD
4 c. boiling water or milk
2 c. rolled oats
2 tbsp. lard
2/3 c. molasses
1 tbsp. salt
1 pkg. yeast
1/2 c. lukewarm water
9-10 c. flour

Pour boiling water or scalded milk over oats and lard, cover and let stand an hour. Add molasses and salt and yeast that has been dissolved in lukewarm water. Add flour gradually, until you have a soft dough. Let rise until double; punch down and form into four loaves; let rise again until double.

Press dough into greased bread tins; let rise again and bake in a 350 degree oven for 40-45 minutes. If you like you can spread the top of the loaves with equal parts of honey and chopped nuts before baking for a sweet bread.
