CHOCOLATE WHOOPIE PIES 
1 1/2 c. sugar
1/2 c. shortening
2 eggs, beaten
1/2 c. sour milk
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
1/2 c. boiling water
1/2 c. cocoa
2 3/4 c. flour

CREAM FILLING:

2 c. powdered sugar
3/4 c. shortening
2 egg whites
1 tsp. vanilla
Dash salt

Preheat oven to 350 degrees. Mix cocoa and water and put aside to cool. Mix together sugar, shortening, eggs and milk; beat until smooth. Add baking powder, baking soda, salt, vanilla and continue mixing. Add cocoa mixture and flour a little bit at a time until mixture is thicker than a cake but not as thick as a cookie.

Using baking sheets, spoon small 1 1/2-inch drops of mixture leaving a bit of room between (as with cookies) and bake 10-15 minutes. Cool and fill with cream mixture.

I was really disappoited with this recipe. The "cookie" part was brittle! Not what I was expecting.
