BANANA MUFFINS | |
1/2 c. butter, softened 1 c. sugar 2 eggs, beaten 3 ripe bananas, mashed 1 1/4 c. all-purpose flour 1/2 tsp. baking soda 1 c. walnuts Combine butter and sugar; beat well. Add eggs and beat mixture until light and fluffy. Stir in bananas and nuts. Combine flour and baking soda; add to creamed mixture, stirring just enough to moisten the dry ingredients. Fill muffin pans 2/3 full. Bake at 350 degrees for 25 minutes or until done. Serve warm. Yield about 15 muffins. |
