ZUCCHINI QUICHE 
PARMESAN CHEESE CRUST:

1 1/4 c. flour
1/2 c. Parmesan cheese
1/4 tsp. salt
4 tbsp. butter
4-5 tbsp. cold water

Blend butter into dry ingredients until it looks like coarse meal. Add water until mixed. Chill. Roll out. 1-2 med. onion, chopped 1 or more clove garlic, crushed 1/2 tsp. basil 2 tbsp. parsley 1 sm. to med. zucchini, sliced 3 tomatoes, diced Salt and pepper Mushrooms (optional, fresh or canned)

Saute onion and garlic in butter until onion is translucent. Add rest of ingredients. Simmer until zucchini is tender. Add 2 beaten eggs and pour into pie shell. Top with grated cheese (Colby or Cheddar) and 1/2 to 1 cup Parmesan cheese. Bake at 350 degrees for 30-45 minutes.
