MINESTRONE SOUP 
1 lb. or more of beef with bones
4 1/2 qt. cold water
2 tbsp. salt
1 c. kidney beans
2 tbsp. oil
Garlic
1/2 lb. ground beef
Chopped onion
1/2 c. parsley, chopped
1 c. chopped celery
1 bunch Swiss chard, chop quite fine
Pepper
1 1/2 c. diced carrots
1 (28 oz.) can tomatoes
1 c. macaroni, shells or elbows
1 c. zucchini, chopped small (2 med.)

Bring first 4 ingredients to a boil and simmer 3 hours. Brown oil, garlic, ground beef, and chopped onion. Add vegetables and cook until tender, then add macaroni and zucchini; cook until done.
