BRAN MUFFINS 
1 c. whole bran
1 1/4 c. buttermilk or sour milk
1/4 c. shortening
1/3 c. sugar
1 egg
1 1/2 c. sifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 c. shredded sharp Cheddar cheese

Soften bran in buttermilk. Cream shortening and sugar until fluffy. Beat in egg. Sift next 4 ingredients. Add to creamed mixture alternately with bran mixture. Stir in cheese. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 30 minutes.
