HUMMINGBIRD CAKE 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. sugar
1 1/2 c. buttery flavored vegetable oil
3 eggs
1 (18 oz.) can crushed pineapple
2 med. or 3 sm. bananas, chopped
1 c. chopped nuts

Mix first 8 ingredients thoroughly by hand; then add bananas and nuts and mix again.

Pour mixture into greased and floured tube pan. Bake at 350 degrees 1 hour and 15 minutes. Let cool in pan 1 hour before removing.

May substitute 1 1/2 cups vegetable oil and 1 teaspoon butter flavoring.

HUMMINGBIRD CAKE ICING:

8 oz. cream cheese, softened
4 tbsp. butter
1 lb. powdered sugar
1 tsp. vanilla
1/2 c. flaked coconut
Nuts, optional

Blend ingredients well and frost cooled cake.
