SOUTHERN SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes
1/2 c. softened butter
1 c. sugar
2 eggs, slightly beaten
1/2 c. milk
1 tsp. vanilla
1 c. coconut, optional

Mash potatoes; add 1 cup of sugar, 1/2 cup butter, eggs, milk, and vanilla. Fold in coconut if desired. Pour into a baking dish.

TOPPING:

1/2 c. light brown sugar
1/2 c. flour
1/3 c. butter, melted
1 c. chopped pecans

Mix sugar and flour together. Add melted butter and mix in the pecans. Spread on top of potato mixture and bake 25-30 minutes.
