PEAR RELISH 
18 large pears
18 bell peppers (use all colors)
3 c. sugar
1 1/2 tsp. salt
1 qt. plus 1 ptsp. vinegar
5 large onions (white and purple mixed)
green and red hot peppers to taste

Chop all ingredients. Cool until tender. Pour into jars and heat seal while hot.
