CARROT CAKE AND ICING 
3 eggs
2 c. grated carrots
1 c. coconut or raisins
1 1/2 c. shortening
2 c. sifted flour
2 tsp. each cinnamon and soda
3/4 c. chopped nuts
2 c. sugar
1 sm. can crushed pineapple (save juice for icing)
1 tsp. salt
1 tsp. vanilla

Put eggs, sugar, carrots, pineapple, nuts, coconut, vanilla and shortening in bowl and mix well; then add flour, salt, cinnamon which have been sifted together. Bake at 350 degrees for 40 to 50 minutes in a 9x13 inch pan.

ICING:

1/2 stick butter
1/2 box sifted 4X or 10X sugar
Reserved pineapple juice
1 sm. pkg. cream cheese
1 tsp. vanilla

Melt butter. Mix other ingredients with butter and pour over cake. This should be poured over cake while cake is still hot.
