ZUCCHINI CASSEROLE 
1 box Chicken Stove Top stuffing mix
1 can cream of chicken mushroom soup
8 oz. sour cream
Chopped up zucchini, green peppers, onion, 1 or 2 celery stalks & some grated carrots

Melt 1 stick butter and pour over stuffing mix - SET ASIDE. Cook the vegetables until soft (put in pot with some water, just enough to cover vegetables). Drain off most of the liquid.

Mix 2/3 of the stuffing mixture into the cooked vegetables also add the sour cream and the soup. Mix all together. Pour into a greased 1 1/2 quart casserole, sprinkle with remaining stuffing mix on top. Bake at 350 degrees for 25 minutes.
