SIMPLE SAUSAGE CASSEROLE 
1 pkg. (approx.) smoked sausage
2 tbsp. olive oil
1 lg. onion
2 tbsp. butter
1 bell pepper (optional)
1/2 c. water
4 lg. potatoes (approx.)
Can use Polish sausage also
Dash of salt to taste
Dash of pepper to taste
Dash of garlic salt to taste
4 qt. pan or skillet

To be cooked in large skillet (preferably). Cut sausage in 1/8 rounds, dice onion, bell pepper, potatoes. Add oil, butter, and water to skillet and turn on medium heat. Add remaining ingredients and cook on medium for approximately 30 minutes or until potatoes are soft. You may add extra oil or water to keep mixture moist while cooking. Stir every 5 or 10 minutes.
