2 c. unpeeled zucchini, grated
3 eggs
1 c. oil
2 c. flour
2 c. sugar
1/2 c. chopped nuts
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
3 tsp. vanilla

Beat eggs until light and fluffy. Add oil, salt, and sugar; beat well. Add nuts and zucchini; beat well. Add vanilla, flour, and remaining ingredients.
