ZUCCHINI & CHEESE CASSEROLE 
2 lbs. diced zucchini
1 lg. green pepper
1 onion
1/2 cube butter
2 eggs
1/2 c. milk
8 saltine crackers, crushed
1 tsp. salt
1/2 tsp. pepper
2/3 c. grated cheese

Cook squash until soft; drain. Saute onion and salt and pepper in butter until yellow. Beat egg, add seasoning and crackers together. Mix all ingredients together and bake at 350 degrees in 9"x9" pan for 30 to 40 minutes until done.
