ZUCCHINI & CHEESE CASSEROLE 
3 to 4 c. zucchini, cut in sm. pieces
1/2 to 3/4 lb. cheese (Cheddar, Monterey Jack or Mozzarella), grated
1 pkg. Ritz crackers, crumbled (16 to 20 crackers)
1 sm. onion
Vegetable oil

In a large frying pan, fry onion until golden. Then add zucchini pieces and steam with a lid on for about 20 minutes. Stir so that zucchini doesn't stick. Once zucchini is tender, sprinkle Ritz crackers over. Add grated cheese of your choice over crackers. Put the lid back on and steam until cheese is just melted. Serve and enjoy.
