MICROWAVE TACO RICE CASSEROLE 
1 lb. ground beef
1 pkg. taco seasoning
1 can cream soup
1 (6 oz.) can tomato paste
1 1/2 c. raw rice
3 c. water
1/2 lb. Velveeta cheese
8 oz. mild chunky salsa

Brown ground beef on HIGH 6 to 8 minutes, stirring once; drain. Stir in taco seasoning, cream soup, tomato paste, rice, and water. Microwave on MEDIUM for about 20 minutes (until rice soft), stirring every 5 minutes.

Add Velveeta and salsa; return to microwave for about 3 minutes. Let stand 5 minutes and serve with taco chips or tortillas. Yield 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
