STUFFED ZUCCHINI 
1 1/2 lbs. sm. zucchini
1/2 lb. ground beef
1 1/2 c. fresh bread crumbs
3/4 c. grated cheddar cheese
1/4 c. minced onion
2 tbsp. parsley
1 1/4 tsp. salt
1/8 tsp. pepper
2 eggs, beaten
2 tbsp. butter

Scrub zucchini. Cut off ends, do not pare. Cook whole with 1 teaspoon of salt in 1 inch of boiling water, covered, for 10 minutes. Start heating oven to 350 degrees. Brown ground beef and onion. Cut zucchini in halves lengthwise. With tip of spoon, scoop out zucchini. Chop into small pieces, then combine with bread crumbs and rest of ingredients, except butter and 1/4 cup of cheese.
