PAT'S ZESTY CARROTS 
8 fresh carrots, cooked & cut lengthwise
1/4 c. liquid from the carrots (water they were boiled in)
2 tbsp. grated onion
2 tbsp. white horseradish
1/2 c. mayonnaise
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. fine bread crumbs or cracker crumbs
1 tbsp. butter
Dash of paprika

Spread the carrots, cut lengthwise in a shallow baking dish. Mix and pour over the carrots the carrot liquid, onion, horseradish, mayonnaise, salt and pepper. Top with bread crumbs. Dot with butter and sprinkle with paprika. Bake at 375 degrees for 15 to 20 minutes. Garnish with parsley.
