MATILDA'S EIGHT DAY PICKLES 
1 c. salt
1 tbsp. alum
1 gal. boiling water
Cucumbers

Fill 1 gallon jar with cucumbers, cut in 1/2 inch pieces. For 3 mornings cover with 1 cup salt and 1 gallon boiling water. Drain. Next 3 mornings, cover with 1 tablespoon alum and 1 gallon boiling water. Drain after each addition and replace liquid. On the seventh morning, drain, let stand in weak vinegar water 24 hours. Last day drain and pack in jars.

SYRUP FOR 8 DAY PICKLES
1 c. sugar
1 tbsp. mixed pickling spices
1 c. vinegar

Cook for 15 minutes. Makes enough syrup for 1 quart jar of pickles. Pour over pickles and seal.
