SWEET DILL PICKLES (14 days) | |
Cut 2 gallons of cucumbers into slices. Soak in brine of 1 gallon boiling water plus 2 cups of salt. Let stand for 1 week. 8th day - Drain and cover with 1 gallon of boiling water. 9th day - Drain and cover with 1 gallon of boiling water plus 2 tablespoons of alum. 10th day - Drain and cover with 1 gallon of boiling water. 11th day - Drain and cover with little boiling syrup of 4 cups vinegar, 10 cups of sugar, 3/4 teaspoon oil of cinnamon, 3/4 teaspoon of oil of cloves. 12th day - Drain and reheat syrup adding 1 cup of sugar. Pour over pickles. 13th day - Drain/reheat - add 1 cup sugar and pour over pickles. 14th day - Drain/reheat syrup adding 1 cup sugar and pour over pickles packed in jar with 1 head of fresh dill on top of each pint jar. Seal. Makes approximately 12 pints. Everyone's favorite. |
