CHICKEN CACCIATORE | |
3 lbs. frying chicken pieces 1/4 c. olive oil or vegetable oil 1 lg. onion, sliced 2 cloves garlic, minced 1 can (16 oz.) tomatoes 1 can (8 oz.) tomato sauce 1/3 c. Kikkoman Teriyaki Sauce 1 tsp. oregano, crumbled 2 bay leaves Brown chicken pieces thoroughly in hot oil in large deep frying pan or Dutch oven; remove. Add onion and garlic to oil and cook until onion is translucent. Stir in tomatoes, tomato sauce, teriyaki, oregano and bay leaves. Arrange chicken pieces in sauce. Cover and simmer 45 minutes or until chicken is tender. To serve, remove chicken pieces onto serving platter, discard bay leaves and skim off excess fat. Serve chicken and sauce on spaghetti, rice or noodles. Serve 4-6. |
