CHUNKY SALSA 
4 qt. tomatoes, skinned
1 1/2 c. fresh jalapeno peppers, seeded and sliced

You may use crushed dried jalapeno or other hot pepper. Add a little at a time until you reach the degree of "hot" you like.

2 c. Spanish sweet onions, chopped fine
4 tbsp. minced garlic
2 tbsp. salt
4 tbsp. lemon juice

Simmer 3 quarts tomatoes for 2 hours. Add the rest of the tomatoes and all other ingredients and simmer 20 minutes longer. Put in jars and process for 10 minutes in boiling water bath.

Makes about 5 pints. 1/2 pint jars are a convenient size also.
