A DIFFERENT SALSA 
1 med. eggplant
2 sm. zucchini
2 med. onions
1 red pepper (hot or sweet)
1 green pepper
3 tomatoes
1 clove garlic, crushed
Salt and pepper to taste
3 tbsp. olive oil

Dice all vegetables. Saute all vegetables in olive oil in large skillet or wok, 10-12 minutes. Use salt and pepper to taste. Place in covered baking dish. Bake 2 hours at 350 degrees. To serve chill several hours or overnight. Serve with tortilla chips or wedges of pita bread.
