CHICKEN RICE CASSEROLE 
1 c. celery, chopped
1 c. Minute Rice (cooked) measure before cooking
1 tbsp. lemon juice
1 tbsp. onion, minced
1 can cream of chicken OR mushroom soup
1/2 c. mayonnaise
2 chicken breasts, cooked & cut up in bite size pieces

Cook onions and celery until just done. Add all other ingredients, mix well. Put in casserole. Top with: 1/2 c. butter, melted 1/2 c. almonds

Cover and refrigerate overnight. Bake 1 hour, uncovered at 300 degrees.
