PECAN PUFFS 
1/2 c. butter
2 tbsp. sugar
1 tsp. vanilla
1 c. pecan meats
1 c. cake flour
Confectioners sugar

Beat butter until soft, add sugar and blend until creamy. Add vanilla. Measure then grind 1 cup of pecan meats. Sift 1 cup of cake flour before measuring. Stir pecans and flour into the butter mixture. Roll the dough into small balls. Place on greased baking sheet. Bake in a slow oven at 300 degrees for 45 minutes. Roll the puffs while hot in confectioners sugar, then when cold, roll again. Makes approximately 32 (1 1/2 inch) puffs.
