MOTHER'S BARBECUE CHICKEN | |
2 broilers (fryers quartered) Salt Crushed red pepper (1 tbsp. or to taste) 2/3 c. vinegar 1 c. water 1 stick butter Place chicken in a shallow baking pan. Marinate in crushed red pepper, vinegar, salt and water for 1 hour, if you have time. Turn a couple of times, if you have time. Add 1 stick of butter and bake at 375 degrees for 1 hour or until the skin turns golden brown and is slightly crisp. Turn the chicken while baking at least 4 or 5 times, and you have to have the time to do this! Serve with white rice covered with the chicken pan drippings. |
