MOTHER'S CHICKEN & RICE 
1 pre-fried chicken
2 whole tomatoes
2 green peppers, diced
1 lg. onion, diced
1 box herb-seasoned rice
2 cans chicken broth

Turn electric skillet on medium. Spread rice and seasoning in bottom of pan, then layer onions and green peppers. Quarter tomatoes in 24 pieces and lay on top of chicken.

Take one can of chicken broth and pour over chicken. Use other can to make sure all ingredients stay moist while cooking. Cook about 2 hours or until rice is done.
