MOM'S ANGEL FOOD CAKE 
1 1/3 c. egg whites
1 1/3 tsp. cream of tartar
1/4 tsp. salt
1 c. sugar
1 1/4 tsp. flavoring
1 c. Softasilk cake flour, sifted 3 times with 1/2 c. sugar

Beat egg whites until fluffy. Add cream of tartar and salt. Continue until whites are glossy and will stand up. Gradually fold in 1 cup sugar. Add flavoring. Gradually fold in flour/sugar mixture. Pour into angel food cake pan and bake at 400 degrees for an hour.
