PORK TENDERLOIN WITH CINNAMON 
2 lb. vacuum packed pork tender loin (Morrell)
4 tbsp. sugar
1/4 tsp. salt
4 tbsp. soy sauce
1 1/2 tsp. cinnamon
2 tbsp. sherry (optional)
1 tsp. powdered ginger
2 tsp. dry mustard
2 tsp. lemon juice

Place pork in roasting pan. Combine all ingredients and pour over pork. Bake 1 hour at 325 degrees, basting frequently with sauce. Cover first 1/2 hour of baking. This is delicious thinly sliced and served on rolls for parties.
